During the dry-aging process, moisture evaporates to improve flavor, and our butchers then trim away excess fat and bone. This means your final "Take-Home Weight" will be approximately 60–70% of the initial hanging weight.
For example: If you purchase a 250 lb Quarter Cow (Hanging Weight), you will receive roughly 150–175 lbs of actual meat for your freezer. While the weight reduces, you are only keeping the most premium, usable cuts of Wagyu. This wholesale method still saves you significantly compared to buying individual steaks at retail prices.
