We've shown you the comparison between Canada and Japan and then how we grade here at Peace Country Wagyu. The Beef Marbling Score (BMS) is universal therefore we grade our meat according to this and give it either Bronze, Silver, Gold or Black.

BMS stands for Beef Marbling Score. The beef is graded according to how much intramuscular fat and its distribution is in the carcass. In Canada, we determine this by looking between the 12th and the 13th rib. Universally, the score goes from 1-12. 1 having the least marbling and 12 being the most. The more marbling that is in the muscles, the more tender, flavorful, juicy, melt-in-your-mouth cuts you'll get. This is what makes higher BMS scoring carcasses more valuable.

When you buy beef in bulk, you are billed based on the Carcass Weight, which is the weight of the animal before it is aged and custom-cut. During the dry-aging process, moisture evaporates to improve flavor, and our butchers then trim away excess fat and bone. This means your final "Take-Home Weight" will be approximately 60–70% of the initial hanging weight.

For example: If you purchase a 250 lb Quarter Cow (Carcass Weight), you will receive roughly 150–175 lbs of actual meat for your freezer. While the weight reduces, you are only keeping the most premium, usable cuts of Wagyu. This wholesale method still saves you significantly compared to buying individual steaks at retail prices.
